Air fryer scones with smoked bacon

Ingredients
- Wheat flour500 g
- Milk250 g
- Butter50 g
- Yeast2 tsp
- Sugar1 tbsp
- Salt1 tsp
- Smoked bacon200 g
- Basil1 bunch
- Egg1 pc
- Canned sweetcorn (or pitted olives)0.5 can
- Fresh herbs (dill, spring onion)
- Egg yolk for brushingoptional
Method
- Chop the basil, bacon and herbs.
- Dissolve the yeast in warm milk, add the sugar, salt and half of the flour; cover and leave in a warm place for about half an hour.
- When the dough becomes bubbly and starts to rise, add the remaining flour, the egg and the softened butter; knead into an elastic dough that no longer sticks to your hands (add a little more flour if needed, but don’t overdo it; oiling your hands with vegetable oil helps).
- Gently work in the filling: herbs, bacon and corn (or olives).
- Shape the dough into a braid, place it in a deep dish, cover with cling film or a damp towel and leave in a warm place for an hour.
- Bake in the air fryer at 150 °C for about 40 minutes; brush with egg yolk for a golden finish.
- For softer scones, cover them while still warm with a towel and then cling film, and leave for 5 minutes.
