Kibbeh with cheese and mushroom filling

Ingredients

  • Beef200 g
  • Bulgur200 g
  • Mushrooms300 g
  • Hard cheese250 g
  • Spring onions1 bunch
  • Ground pepper mixto taste
  • Saltto taste
  • Vegetable oil1 tbsp

Method

  1. Soak the bulgur in water for about 3 hours.
  2. Cut the beef into medium pieces, trimming off as much fat as possible, and mince it in the HMG-2570 meat mincer using the fine plate.
  3. Squeeze the bulgur well, add it to the mince, season with salt and ground pepper mix to taste and mix thoroughly.
  4. Pass the meat and bulgur mixture through the mincer once more. If it is too dry, add a little cold water and mix.
  5. For the filling, wash the mushrooms and cut them into small pieces.
  6. Heat a spoonful of oil in a frying pan, add the mushrooms after a minute and fry, stirring, until all the liquid has evaporated. Season with salt and pepper, fry for another 1–2 minutes, then let cool completely.
  7. Mince the mushrooms using the fine plate and combine with finely chopped spring onions.
  8. Fit the kibbeh attachment onto the mincer and feed the meat mixture through it in batches, cutting off the tubes with a knife or your fingers.
  9. Place some mushroom filling on a thin slice of cheese and roll it up tightly. Stuff the meat tubes with the cheese-and-mushroom rolls and pinch the ends to seal.
  10. Cook the kibbeh in the HAG-7070 air fryer for 15 minutes at 180 °C.
  11. Serve with a side dish or fresh herbs.
