Air fryer garlic buns (pampushki)

Ingredients
- Wheat flour500 g
- Milk250 ml
- Yeast10 g
- Sugar10 g
- Vegetable oil3 tbsp
- Stock cube (mushroom)1 pc
- Seasoning
- Garlic½ head
- Egg yolk1 pc
- Fresh herbs (any you like)
- Sunflower seeds (shelled)2 tbsp
- Sweet chilli sauceto taste
Method
- Add a teaspoon of sugar, 1 tbsp of vegetable oil and the dry yeast to 100 ml of warm milk. Leave in a warm place for about 15 minutes until foamy.
- Dissolve the mushroom stock cube in the remaining 150 ml of hot milk.
- Peel half a head of garlic and grate it finely. Mix all the seasonings together.
- Combine all the milk mixtures in a large bowl, add the seasonings, stir and leave in a warm place for about 10 minutes so the spices can release their aroma.
- Gradually add the flour to the milk mixture and knead a soft, elastic dough — don’t overwork it.
- Cover the bowl with a clean towel and leave the dough to rise for 1 hour.
- Divide the dough into 12 buns. Line the bottom of the air fryer with cling film, place 6 buns inside, cover with a towel and leave in a warm place for about 20 minutes for a second rise.
- Bake for 20 minutes at 150 °C.
- While the buns are baking, make the topping: whisk the yolk and add the grated garlic, 2 tbsp of vegetable oil, sweet chilli sauce to taste, 1 tbsp of shelled sunflower seeds and finely chopped herbs.
- Take out the air fryer basket, quickly brush the buns with the egg-and-garlic mixture and bake for another 5–7 minutes.
